2 store-bought chocolate cakes (2 tiers)

For the filling:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract

1 cup fresh cherries, pitted and halved

For the topping:

75g French cooking chocolate, broken into cubes

50ml double cream

75g butter, cut into cubes

Whole cherries for garnish

Sprinkles (optional)

Instructions
Step 1
To make the cream filling: In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Use a whisk to beat the mixture until stiff peaks form.
Step 2
To make the ganache: Melt the butter and the chocolate in bain-marie until glossy then stir in the cream. Chill for 10 minutes.
Step 3
To assemble the cake: Place one chocolate cake layer on a serving platter.
Step 4
Spread a layer of whipped cream using a spatula over the cake, leaving half of the cream for topping.
Step 5
Add a layer of cherries pitted and halved on top of the whipped cream.
Step 6
Top Tier and Ganache Drizzle: Place the second cake layer on top.
Step 7
Drizzle chocolate ganache over the top, spreading until it just drips over the sides.
Step 8
Whipped Cream Decoration: Spread whipped cream around the edges of the top cake layer. Add fresh cherries on top to decorate.
Step 9
Add sprinkles for extra decoration.
